Grape category: Žilavka and Chardonnay in the same ratio • Category: sparkling wine sec - classical method • Region: Hercegovina • Wine - Growing are: Mostar - Middle Neretva • Vineyard: Trtle - 450 metars above sea level • Premium quality sparkling wine is made by classical method from Žilavka (indigenous variety of Herzegovina) and Chardonnay in same ratio. Classical method means that second fermentation is made in the bottle and that method is very expensive and very difficult. There are lot of loses during the second fermentation and that is way not many wineries going into this way. If our company is located in France in region Champagne we could call Brocco champagne but this name champagne is reserve only for sparkling wines that are coming from region Champagne in France. Sec means that it has 17 - 35 gr / l residual sugar, it sweeter that brut or extra brut. Brut is more appriciated in Europe but sec is in Asia, since we export a lot to Asia we decided to produce sec but I can announce that from next year we will have brut and rose brut, so Brocco will have family of products. In this sparkling wine chardonnay is dominated on the nose and Žilavka on the palate. • Serving: sparkling wines are served on 8-10°C , some use ice bucket but that all depend on occasion. It is recommended when you pour sparkling wine into the glasses not to pour all liquid. Some of liquid is recommended to stay in the bottle approx 0,05l because some bottles create little wine salts, crystals so it is better that this remain in the bottle. That is why champagne bottle have cavity in the bottom of the bottle. These salts are not damaging, they are harmless but it is recommended that drinker see little bubbling in the glass because more bubbling in the glass is better. That is why sommelier always use special glasses for sparkling wine. • Food and wine paring: sparkling wine is usually served as welcome drink, drink for start an evening, dinner and to celebrate something. Due to lower alcohol it can be paired with appetizer. Also due to the high level of acidity it can goes well with Asian food. Also goes well with desert, sparkling wine and strawberry cake is excellent choice
